Recipes: Smart or Sinful

Okies.. Shel and Meesh have been dieting, and doing this weekend recipe thing. So in the spirit of being supportive, and hellful as I so often am, I am going to put up a few recipes I like this week. One of my favorite veggies is broccoli, so I thought I would do two recipes using it as the main ingredient. Technically they are the same recipe. One is the WW version, and the other is the full flavour recipe. It is nice to know I can enjoy it either way. =]


The Smart

Broccoli Casserole

1 1/2 cups shredded nonfat or reduced-fat sharp Cheddar cheese
1 3/4 cups dry curd or nonfat cottage cheese
1/3 cup fat-free egg substitute
1/3 cup finely chopped onion
2 packages (10 ounces each) frozen chopped broccoli, thawed and drained
2 Tbsp unbleached flour
1/4 tsp ground white pepper
3 Tbsp finely ground fat-free whole-wheat cracker crumbs

Set aside 1/2 cup of the grated Cheddar cheese. Combine the rest of the cheese and all of the remaining ingredients except for the cracker crumbs in a large bowl, and stir to mix well.

Coat a 2 1/2 quart casserole dish with nonstick cooking spray. Place the broccoli mixture in the dish, sprinkle with the cracker crumbs, and spread the reserved cheese over the top.

Bake at 350 degrees for 50 minutes or until the top is golden brown. Let sit for 5 minutes before serving.

12 servings , 1.5 POINTS each, Serving size: 2/3 cup

The Sinful

Broccoli Cornbread

2 sticks (1 cup) margarine or butter
2 packages Jiffy cornbread mix
1 10-oz package frozen chopped broccoli, thawed but not drained
1 onion chopped
1 carton (10-12 oz) cottage cheese
4 eggs
1 cup shredded cheddar cheese

Melt butter in a 9 X 13 pan.

Mix together all other ingredients except cheddar cheese. Pour batter over butter.

Bake at 375 for 25 minutes or until lightly brown. Sprinkle with cheddar cheese and bake for another 5 minutes or until cheese is melted and bread is brown.

Yup.. I have had both, and I know they are both good. I know which one I prefer, but I am willing to do the substitution in order to be healthy. I hope you all enjoy.

Mmmmmm.. yeah.. that would be my preference too, Sage. Maybe with something sticky, sweet and chocolatey after. *licks her lips*

I would be willing to work out after.. maybe something horizontal. :D
